Elyse’s Banana Bread


I was visiting my little sister over the weekend and she whipped up this banana bread for breakfast in a flash. Hearty, moist and full of flavour this vegan and gluten free treat is perfect for breakfast or a snack with a cup of tea! Mmmmmmm…

Yield: 1 Loaf

Prep time: 15 minutes

Cook time: 1 hour


2.5 cups brown rice flour

5 tsp baking soda

1.5 tsp baking powder

1/2 tsp sea salt

1/2 tsp cinnamon

2 flax eggs

6 ripe bananas + 2 whole bananas split in half, one for the middle of the loaf, one for the top.

1/4 cup maple syrup

1 tsp vanilla extract

1/4 cup melted coconut oil



  1. Preheat oven to 350 degrees. Prepare loaf pan by greasing it with coconut oil or prepping with parchment paper and set aside.
  2. Combine all dry ingredients in a large bowl.
  3. In a separate large mixing bowl, mash 6 bananas. Then stir in other wet ingredients.
  4. Once all wet ingredients are combined, slowly in corporate the dry ingredients.
  5. Pour half the batter into prepared loaf pan, add one split banana lengthwise in the centre of the loaf, then pour the rest of the batter into the loaf pan. Top with another split banana.
  6. Bake loaf at 350 degrees for 1 hour or until toothpick inserted comes out clean. Enjoy!
