Fall is here and that means cozy drinks! Okay, I know I live on a tropical island but my Canadian genes are begging for a little pumpkin spice and all that’s nice right about now, so this Golden Chai Latte on a rainy afternoon will have to suffice 😉 You can make it caffeinated or not, up to you, but be sure to soak-up every anti-inflammatory, warming sip of this delicious treat!
Yield: 2 servings
Time: 1o minutes
Ingredients:
1 cup water
1/4 tsp ground cardamon
1 1/2 tsp turmeric powder
2″ knob of ginger sliced thinly
2 cinnamon sticks
2 whole star anise
6 whole cloves
pinch of black pepper’
pinch of nutmeg
2 black tea bags (optional)
2 Tbsp maple syrup (optional)
2 Tbsp coconut oil
2 cups almond or soy milk
Method:
- Put all your spices in a small saucepan with the water and bring to a boil. Reduce heat and let simmer for 10 minutes covered so you don’t lose all your water. Remove from heat and add your tea bags if you wish to have a caffeinated version and steep for as long as desired, otherwise set aside while you prepare your milk.
- In another small saucepan heat your milk to just about a boil and then turn off the heat. Add the coconut milk and maple syrup. Using and immersion blender or frother, froth milk until nice and frothy.
- Run spice mixture through a fine mesh strainer pouring evenly between two mugs. Then pour in your milk, again dividing evenly between two mugs. Garnish with a little pinch of nutmeg if desired and then serve immediately. Enjoy!
