This is hands down my favourite smoothie recipe. It’s full of antioxidants, healthy fats, plant-based protein and it tastes amazing. I’ve been having this smoothie for breakfast for the last 4 months almost daily and I’m not sick of it yet! Have it for breakfast or a post-workout meal, it’s filling and the protein, fibre and healthy fat means you’ll be satisfied through till your next meal.
Yield: 2 servings ( You can easily halve this recipe to make a single serving 😉 )
Ingredients:
1 large handful of kale, chopped, rinsed and de-ribbed (approximately 2 cups)
1 large handful of baby spinach (approximately 2 cups)
1 small handful of fresh mint (I love mint in this smoothie, it makes it taste so fresh so if you love mint too then so don’t be shy!)
1 cup frozen pineapple chunks
2 Tbsp chia seeds
2 Tbsp MCT oil (optional)
1 scoop of plant-based protein powder (I love either pumpkin protein powder or straight-up raw hemp seeds)
1/2 avocado
1-2 cups of coconut water (adjust liquid depending on how thick you like your smoothie)
Method:
Add all ingredients into a high speed blender and blend until smooth. Enjoy!
